Stracchino
Stracchino (from lombard language "stracca" that means "tired". It's called so because it's said that the cows get tired by going up and coming down the alpine partures and as a result, the cheese becomes very rich in fats.) is a soft creamy italian cheese made from cow's whole milk.
Stracchino is a raw texture cheese and it can be made of raw milk (tipically kind of stracchino made on Alpine hut) or by pasteurized milk.
Crescenza is a stracchino, as "Robiola", "Taleggio", "Strachitunt", "Gorgonzola (blue cheese)", "Salva Cremasco" and many others. In particular, "Crescenza" is an extra fresh stracchino, in other words, it's not matured as usually stracchino does within 20-30 days.
It's a very soft creamy white cheese with no rind.
